Tuscan White Ragu

Ragu, a slow cooked sauce, usually but not always with meat. It does not have to be a tomato sauce. As a matter of fact, many of the ragus I have enjoyed in Tuscany that no tomato at all, or have a hint of tomato but are not “red sauce”. This dish is exactly that, a rich meat sauce without tomatoes. I enjoyed this at Trattoria Rusticanella in Lucca and recreated the recipe.
Though wild boar is available online, you can use ground pork, or even “meatball mix” which is a blend of pork, veal and beef. Wild boar has a richer taste than pork because it has a very different diet.
Serves 4 with leftovers.
