RIC’ TOMATO JAM
This is NOT ketchup, but it is somewhat a Sicilian influenced ketchup-like jam. This sweet and tangy spread is a delicious condiment for charcuterie and rich cheeses.
three pounds fresh Roma tomatoes*
Salt
1 cup local raw honey
Juice of 1 a lemon
