“Wanna go out tonight?” I asked when she called me on her way home.

“Sure, sounds great. Let’s go have a couple of small plates and drinks at a bar somewhere” she enthusiastically suggested. I assume it was enthusiasm. She always has a habit of yelling when she is using hands free in the car.

We had a fun early night eating at the bar at our local Bistro; classic cocktails, two apps, a salad, perfect. We almost always eat at the bar when we go out. We sit side by side and more often than not we become engaged in conversations with the bartender and other guests at the bar. It is the best social scene. Sitting at a quiet table is pretty much what we do at home on the other five or six nights a week. It is not a bad thing. I like it. But when we go out we want some conviviality. Eating at the bar a natural.

After our few small plates and two drinks each we went home happy. We had a great time chatting around and didn’t spend a ton of money. Well, I do tip big at the bar, so…not a ton but enough. We were looking forward to a nice Friday night on the couch, catching up of the Pitt and the White Lotus.

By 11:00 PM we were both dozy, but still awake. I asked Liz if she wanted to go up to bed. She smiled through sleepy eyes and said, “What about Pasta?”

So Midnight Pasta is one of our late night faves. I have many quick recipes, but this one I call Soupy sauce. Not because it is soup, but it is a light loose sauce that doesn’t overwhelm your system. It is quick but is still outrageously delicious. And best of all, from the time you put the pasta water on to boil, it takes all of 20 minutes to make, end to end.

In this dish I used the fantastic Cinque Bucchi ancient grain pasta from Sicily that I sell. You really should try it. The texture is so much fun. It is truly delicious. Get yours here (But you can use what you have.)
