We all want to do better and eat locally. Here in the Northeast that is extremely limiting when it comes to salad. Sure, there are local apples and potatoes available but if you really want a great salad for lunch or with dinner, this is the one I love. Fennel and orange salad is a classic Sicilian salad, where oranges and fennel are os common as common all over the island. January and February are prime season for oranges, and they also are known for their immune boosting powers. The sweet, tart orange, slathered in olive oil with the crunch and sweetness of the fennel will wake up your sleepy winter tastebuds. You can use a Mandoline to shave the fennel bulb, or just use a knife and slice it as thinly as you can. In my home, we make a big bowl for dinner, and leave the leftovers out on the counter, covered, and enjoy nmore for breakfast the next day,
